Vanillekipferl

My family takes Christmas cookies very, very seriously. Each year my family joins in a singular mission of cultivating a spread of anywhere between ten to twenty different cookies all held in their own festive tins. Last year, we amassed a collection of over 1,000 cookies which were shared with family, friends, and our very own bellies. Hands down, if I could pick only one of these cookies to enjoy for the rest of my life it would be my Grandma's vanillekipferl - horse shoe cookies for short... or at least for English. These crunchy, nutty, buttery cookies are well worth the labor and pair perfectly with your favorite holiday drink - black tea, coffee, or eggnog.


This recipe comes courtesy from my shockingly vague Grandma:

Vanillekipferl on a Christmas Cookie Spread

Ingredients:

  • 12 oz pl. flour

  • 8oz butter

  • 4 oz powder sugar

  • 2 egg yolks

  • 4 oz grated almonds

  • 1 tsp vanilla extract

Method:

1. Make dough like a pie, let it rest for couple hours in cool area.

2. Shape into horseshoes.

3. Bake at 325 degrees, about 15 minutes, let them get cold then dust them with powdered sugar Enjoy!
